Colorful Keto Sheet Pan Chicken
serves 4-6 / prep time 20 min / cooking time 30 min
Arrange a rack in the middle of the oven and heat to 425°F.
Chop all veggies and keep separate on your cutting board.
Place two chicken breast in the center of a large sheet pan. Transfer all veggies from the cutting board evenly arranging into a single layer around the chicken breast.
Drizzle roughly 1/4 to 1/2 cup of olive oil across the chicken and veggies. Sprinkle with a dash of salt and pepper.
Bake at 425˚F for 30 minutes, or until the internal temperature of the chicken reaches 165˚F.
Remove from oven, and serve immediately. Enjoy!
