Grilled Watermelon Salad
serves 2 cups / prep time 13 min / cooking time 7 min
Slice 1/2 cup onions and place in a bowl covered with water and 2 teaspoons of balsamic vinegar. Cover and let sit for 7 minutes. Drain.
Heat grill or 12” stovetop pan on medium-high height.
Brush watermelon slices lightly with 1 ½ tablespoons of evoo. Grill for 1-2 minutes per side, or until slightly charred.
Add grilled watermelon, arugula, onions, feta, remaining balsamic vinegar and evoo and toss together. Top with fresh mint and freshly squeezed lime. Salt and pepper to taste. Can be made up to 1 hour in advance
