Pumpkin Soup

Onions 52 Yellow Onions
Pumpkin (any variety)
3 lb
Garlic cloves, peeled
Green onions, chopped
1 tbsp
Cream or Milk
1 cup
Chicken broth
3 cups
1/2 cup
Sea salt
1 tsp
Fresh-ground peppercorns
1 tsp


  1. Cut the pumpkin into 2” slices. Cut the skin off and scrape seeds out. Cut into 2” cubes.

  2. Place the pumpkin, onion, garlic, broth and water in a pot. Boil uncovered for 8-10 minutes. Reduce heat + and simmer until pumpkin is tender (~20 minutes).

  3. Remove from heat and add cooled mixture to blender, blend until smooth. 

  4. After soup has cooled, stir through cream. Add salt and pepper to taste. 

  5. Ladle soup into your favorite fall bowl, drizzle with cream, and top with freshly diced green onions (optional). Serve with savory croutons.
