Sweet Onion Casserole

serves 8 / prep time 15 min / cooking time 45 min

Ingredients

Ingredients
Onions 52 Yellow Onions, sliced
2 lb
Water
2 cups
Butter, divided
2 tbsp
Eggs, large
2
Skim milk
1/4 cup
Cheddar cheese, shredded
1 cup
Buttery round crackers
15
Cheese-it crackers
1 cup
Salt
1/2 tsp
Pepper
1/4 tsp

Directions

  1. Preheat oven to 375°F.

  2. In a skillet on medium-high heat, add the onions and just enough water to cover them. Bring to a low-boil and cook until tender, about 8-10 minutes. Drain in a colander.

  3. In a plastic bag, crush the round crackers and cheese crackers into a fine crumb. In a medium bowl, stir together 1 tablespoon of the butter, salt, pepper, the drained onions, milk and cheese. Fold in half of the cracker crumbs. In a small bowl, whisk and temper the eggs and with a couple tablespoons of the onion mixture. This is an important step as adding the eggs directly to the warm onion mixture can scramble them. Pour the mixture into a buttered or non-stick sprayed 2-quart baking dish. Bake 30 minutes.

  4. In a small bowl, stir together the remaining butter, melted, and cracker mixture. Carefully remove the casserole from the oven, and sprinkle the mixture evenly on top. Bake an additional 15 minutes or until bubbling and lightly browned.
